That’s not me, I’m certainly not the best cook in town, not even close! But I do enjoy cooking for friends and family, and feel that eating well in today’s busy world is more important than ever.
Over the years, I have found a few recipes that seem to go over well, and my children have even started asking me to write down a few of my favorites. And from there, all it took was a dare from my wife, and here we go…
What follows below is a combination of old family recipes, along with others that I have altered or borrowed from more established chefs, cookbooks and websites. I don’t promise to always use formal measurements or exact times, but I will do my best to provide an honest assessment of what it takes to create each recipe as I assemble each one in my own kitchen, just like you likely make your food each day.
I’ve also done my best to clean up the ingredient list in each recipe, to better reflect the health and nutrition choices that I am making on a daily basis. That’s not to say that some of these recipes are indulgent and are better described as “cheat meals”, but those will be clearly labeled as should probably be consumed infrequently if you are concerned about your waistline and health!
